Mercury Outboard 1997 125hp Elpto 2x2

Recently purchased 1997 Starcraft starship 2005 with 1997 Mercury 125hp Elpto 2x2. I recently had a tune up completed with new spark plugs, fuel filter, seals ect... because I was getting poor performance. After the tune up it ran well for the first 1-2hrs of running it hard tubing. The power then drops 1000rpms/10mph for no obvious reason. If I shut the motor off for 20-30 mins it seems to fix the issue. It consistently loses power every 1-2hrs running it hard...?
